Confetti Cake for Carnival, the recipe. 25/02/2014

 

Anything goes on Carnival!

Hello everyone, this year is going by so fast and the time has come to put a mask on and have fun, there is no better way of celebrating the Carnival than with a cake, and this is why today I bring you a very nice and fun recipe to make, even with the help of the little ones at home, the “confetti cake”.

In Carnival we can see the streets full of Confetti and colorful decorations everywhere, for which we must also fill desserts with color.

To prepare this delicious cake you need:

  • 150 grams of 00 flour
  • 2 teaspoons of powder yeast
  • 1 pinch of salt
  • 120 grams of butter
  • 200 grams of sugar
  • 3 eggs (just the egg white)
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of almond extract
  • 60 ml of milk
  • 45 ml of butter cream *
  • ¼ of a cup of color sprinkles

* IINGREDIENTS FRO THE BUTTER CREAM

  • 100 grams of butter
  • 150 grams of margarine
  • 350 grams of powdered sugar
  • 3 tablespoons of milk

Before anything, turn the oven on to 180 º C. In a bowl put the flour, the baking powder and the salt, mix and put aside.

In another bowl mix the milk and the yogurt and set aside for the moment. In a planetary mixer/stand mixer, mix the butter with the sugar on low speed until it turns into a soft and light mixture. Add the egg whites, almond and vanilla extract, then half of the flour and half of the milk and continue mixing until there are no lumps.

Add the color sprinkles and separate the mixture in two trays, bake for 40-45 minutes, after which you can try to put a toothpick in the center of the cake: of it comes our clean, it means it is ready.

Let the cakes cool and, meanwhile, make the buttercream:

For the buttercream, warm up the milk in a pot, pour in the powder sugar in the mixer, add the butter and margarine very softened. Pour the milk in slowly into the mixer until the sugar incorporates with the margarine and butter; then we increase the speed. Let a few minutes pass until you get a foamy cream.

When the buttercream is ready, take one of the cakes and distribute the buttercream, put the other cake on top and finish covering both cakes with the cream.

And now the most beautiful moment! We put the cake in a large plate and with our hands we add the color sprinkles everywhere until we fill the entire cake.

Here it is!!! Our confetti cake is ready, now we are ready to celebrate, put on your masks and enjoy this wonderful cake.
