Plum and walnut cake recipe 2022/03/01

 

The plum cake is a dessert which main ingredient is yogurt, it has an elongated shape with a dome in the surface, ideal for breakfast.

You can prepare it in a simple manner or add chocolate sprinkles, little chunks of sugar-coated or fresh fruit, today I propose one with walnuts with a rustic and determined taste. You have to taste it!

Ingredients:

  • 300 grams of flour
  • 1 dessert yeast packet
  • 2 eggs
  • 100 grams of butter
  • 80 grams of honey
  • 50 grams of sugar
  • 150 grams of whole walnuts
  • 250 grams of white yogurt

First, put the butter in bain-marie to melt it.

Beat the eggs with the sugar in the mixer for at least 5 minutes. The mixture must increase its volume and be spongy.

Add the honey and mix for other 2 minutes.

Chop the walnuts, not too thin because they are the ones that are going to give the crunchy taste. I placed them inside a bag and broke them with a roller pin. Add them to the dough together with the melted butter and the yogurt.

Add the yeast and the flour little by little as you continue to mix with the blender.

Put the mixture in a baking mold for plum cake covered with wax paper and bake for 30 minutes at 170°C.

To check if its cooked, try the toothpick test: insert it in the center of the dome where there is more dough and if it comes out clean, the cake is ready.

When cool, unmold it with the help of the paper and serve for a special breakfast, like Father’s Day.
