Recipe to prepare pickled Chili Peppers and Vegetables 2016/02/24

 

Today I’ll show how to prepare some delicious Pickled Chili Peppers to accompany snacks and appetizers

Ingredients

  • Chili peppers to taste
  • 3 medium onions
  • 2 carrots
  • 4 cauliflower rosettes
  • 3 garlic cloves
  • 30 ml of oil
  • 1 cup of vinegar
  • 1 cup of water
  • 1 tablespoon of oregano
  • Laurel leaves, optional
  • Salt and pepper

Wash the ingredients and chop the vegetables, the onion in 8 parts, the chili peppers in 4 parts, carrots in diagonal slices and for the cauliflower, separate the “little trees” carefully separately

We chop the garlic in half and here is another way to cut the chili peppers

Leave the vegetables ready for the next step, we heat the oil

Start sautéing the onions, chili peppers and garlic, then we add in the rest of the vegetables

Cook until the onion is almost transparent.

At this point, add the vinegar and the water

Salt, oregano and pepper; laurel leaves optional

Once it has boiled, cover and let rest for 10 minutes, at this moment they are ready to be served and there is no need to pack.

If on the other hand we wish to preserve, then we fill some sterilized jars with the vegetables

Making sure the liquid covers them.

Turn the jar upside down for 5 minutes. They are ready

Pickled chili peppers can be served with meats, in sandwiches. If your family likes more than one vegetable, it’s enough to just add more of it.
