Recipe Zucchini Rolls 2016/05/25

 

Today we will prepare a side dish or appetizer to complement a lunch or dinner, I hope it’s of your liking

Ingredients for 4 people

  • 2 zucchini
  • 10 chards or spinach leaves
  • 250 grams of panela or fresh cheese
  • 300 grams of mushrooms
  • Salt
  • Oil

To calculate the amount of zucchini to use, a measurement would be one zucchini for 2 people, this is just to be used as a side dish or appetizer. So, we begin cutting the zucchini lengthwise and browning it on the grill with a little bit of oil

Aside, parboil the mushrooms on a pan with water and salt; chop small thin cubes of cheese

On a pot, boil water, add the chard or spinach for 5 minutes to tenderize them, avoiding overcooking and drain them. We can roll spinach and cheese only

Or, roll the chard with cheese and mushrooms

We proceed to wrap the chard roll with the zucchini

It could be served as a side dish or appetizer
