Recipe to prepare Backed Potatoes 03/28/2018

 

Here is the recipe to prepare delicious baked potatoes to serve as entrees or side-dish in events such as dinner parties or luncheons… everybody likes them! 

Ingredients

  • Potatoes, 1 potato per person
  • Olive oil
  • Spices: rosemary, garlic powder
  • Wax paper
  • Salt

Turn on the oven at 200°C before starting the recipe

Wash the potatoes, peel them and keep them in cold water to avoid them from turning brown, and also to get rid of excess starch. 

We cut the potatoes uniformly in small squares, during all the process maintain the cut potatoes or entire potatoes in cold water

In a casserole we put water with a bit of salt, enough to cover up all the potatoes. Once the water is boiling, we carefully add the potatoes and cook for only 5 minutes and immediately drain the potatoes, preferably use a chronometer so you don’t exceed time

In the same casserole, season using salt, olive oil, various spices and mix perfectly to cover up the potatoes with all the ingredients

We put the wax paper on a backing tray and place the potatoes

When the oven has reached the 200°C, we put in the potatoes for 25 to 30 minutes checking very carefully at the end if the potatoes are cooked and golden or they require less or more time. Take them out of the oven as soon as they are golden to avoid moisture

The backed potatoes are ready to be served, for that reason you must calculate time when served to avoid them from becoming cold
