2 sweet recipes for Saint Patrick’s Day 17/03/2014

 

Saint Patrick’s Day is almost here, although it is about a party with Irish origin it has conquered other countries with its green color, it is a very fun party and children love it.

In Saint Patrick´s Day the most common things are: leprechauns, clovers, cauldrons with gold coins, rainbows and over all the color green.

And it is precisely this reason why today I propose these delicious ideas for Saint Patrick, they are very easy to make and perfect to have some fun with the children.

Clover cookies

Ingredients:

  • 90 grams of butter
  • 100 grams of sugar
  • 1 egg
  • 200 grams of flour
  • ½ teaspoons of baking powder
  • 1 teaspoon if vanilla essence
  • 1 pinch of salt

Beat the butter and sugar.

Incorporate the egg and vanilla essence, then the flour

Add the baking powder and a pinch of salt.

Transfer everything to a board and knead until getting a loaf, which you will place in the fridge to chill for 30 minutes.

Extend on a floured surface a sheet of puff pastry of ¾ mm thick and with a cookie cutter cut the cookies shaping them like clovers.

Put the butter cookies on a baking tray and bake at 180º C for 10/12 minutes or until the surface is golden. Let the cookies cool before lifting them from the tray.

For the green icing:

  • 200 grams of powdered sugar
  • 3 egg whites
  • green food coloring

Put the egg whites in a bowl, add the powder sugar and then pour in the food coloring until getting the desired color, finally leave in the fridge for 20 to 30 minutes and then spread on the made cookies.

You can make as many combinations with the icing and create so many types of decorations for your cookies, let your imagination go.

IRISH CUPCAKES

  • 50 grams of cacao
  • 240 ml of boiling water
  • 175 grams of 00 flour
  • 1 tablespoon of baking powder
  • ¼ tablespoons of salt
  • 113 grams of unsalted butter
  • 200 grams of sugar
  • 2 eggs
  • 2 tablespoons of vanilla extract

Preheat the oven at 180 º C, in a bowl mix the boiling water with the cacao until soft and let it cool.

In another bowl, beat the butter and sugar until light and fluffy, add the eggs one a time, beating until the mixture is uniform, add the vanilla extract and flour and beat, finally add the cacao.

With the help of an ice cream scoop of 5 cm in diameter, pour one scoop of the mixture into each tin.

Bake at 180º C for approximately 30 minutes. After the first 25 minutes, check the baking of the cupcakes: a toothpick inserted in the middle of one cupcake must come out dry.

Remove the cupcakes from the oven and let them cool on a cooling rack for ten minutes.

When they are cold enough to handle, transfer from the cooling rack and let them cool completely.

To make the buttercream we need:

  • 250 grams of softened butter
  • 1 teaspoon of vanilla extract
  • 600 grams of powder sugar
  • 2 tablespoons of milk

In a bowl beat the butter and vanilla extract. Incorporate the powder sugar, one quarter at a time, continue mixing well before each adding. Add the milk without stopping the mixing of the ingredients until a soft and foamy cream forms. Keep the cream covered until the moment of decorating the cupcakes comes. You can decorate with color sprinkles and a chocolate coin..
